CURRIED BANANA SALAD RECIPE (20 servings)

Ingredients for this recipe:
- 3-4 Medium onions
- 1 D.spoon butter
- 3 Cups boiling water
- ½ Cup cold water
- ½ Cup vinegar
- ½ Cup cake flour
- ¼ Cup golden syrup
- 2 T.spoon curry powder
- 1 T.spoon mustard powder
- 1 T.spoon salt
- A pinch of pepper
- 8 Medium bananas
Method for this recipe:
- Peel and chop onions coarsely and fry lightly in the butter.
- Add the boiling water and cook until the onions soften.
- Mix remaining ingredients, except the bananas, together well.
- Add to the onions, stirring constantly to prevent lumps forming.
- Cook for about 5 minutes until thickened.
- Allow to cool.
- Peel and slice the bananas.
- Add to the cold salad and mix lightly.
Tip.
Leftover salad will keep well for a day or two when kept in the fridge. Can also be cooked in a heavy saucepan until the banana slices are cooked. This makes a delicious sauce for chicken or meatballs.
BANANA AND DRIED FRUIT SALAD RECIPE (12 servings)
Ingredients for this recipe:
- ½ lb. Dried fruit
- 6 Large bananas
- 1 Can condensed milk
- ½ Cup white vinegar
- ¼ Cup cooking oil
- 2 T.spoon mustard powder
- ½T.spoon salt
Method for this recipe:
- Stew the dried fruit until soft but not mushy.
- Drain well and chop.
- Peel and slice the bananas and add to the dried fruit.
- Beat the condensed milk, vinegar, oil, mustard powder and salt well.
- Pour over the fruit and mix well.
- Refrigerate until needed.
Tip.
Goes well with curried dishes. Ideal with barbecue.
HOT POTATO SALAD RECIPE (6 servings)
Ingredients for this recipe:
- 8 Medium potatoes
- ½ lb. Bacon
- 1 Onion
- ½ Sweet pepper
- 2 D.spoon cake flour
- 1 T.spoon brown sugar
- 1 Cup water
- 1/3 Cup cider vinegar
- ½ T.spoon salt
- A pinch of pepper
Method for this recipe:
- Cook potatoes in their skins until done.
- Peel and dice them.
- Remove the rind of the bacon, shred the bacon and fry until crisp.
- Add to the diced potato.
- Peel and chop the onion.
- Seed and shred the sweet pepper.
- Fry onion and sweet pepper in the bacon fat until softened.
- Stir in the cake flour and brown sugar, and then add the water, cider vinegar, salt and pepper. Cook until thickened, stirring constantly.
- Add to the potato mixture and mix lightly.
- Serve hot.
Tip
This is a filling salad and can be served as a main meal with tomato wedges and a mixed green salad.
CURRIED RICE SALAD RECIPE
Ingredients for this recipe:
- 2 Cups chilled cooked rice
- 1 Shredded green pepper
- 2 Tbsp drained red pimentos cut in strips
- 2 Tbsp seedless raisins
- 2 Tbsp chopped parsley
- 2 Tbsp chopped spring onions
- ½ Cup olive oil
- ¼ Cup vinegar
- 1 Tbsp lemon juice
- 1 Clove chopped garlic
- 1 Tbsp sugar
- ½ Tsp curry powder
- Salt and pepper to taste
- Salad greens
- Green pepper rings
- Tomato wedges
Method for this recipe:
- Using two forks, toss together the rice, green pepper, pimentos, raisins, parsley and onions – chill thoroughly.
- Combine oil, vinegar, lemon juice, garlic, sugar, curry powder, salt and pepper.
- Just before serving pour the vinegar mixture over the salad and toss well.
- Arrange the salad in a large bowl and garnish with crisp greens, green pepper rings and tomato wedges.
- A delicious salad with fried chicken.
