Light and Refreshing Stuffed Grapes New Years Party Recipe
What You Need:
- 4 oz. cream cheese, room temperature
- 3 T confectioners’ sugar
- 1 1/2 t lemon juice
- 1/2 t lemon peel, grated
- 1 lb. globe grapes, seedless
How to Make It:
- Place the softened cream cheese in a small mixing bowl.
- Add the sugar and lemon juice and beat with an electric mixer on low speed until creamy.
- Blend in the lemon peel with a rubber spatula.
- Cover the mixture and place in the refrigerator to chill for 1 hour.
- Rinse and dab the grapes dry with a paper towel.
- Use a sharp pointed knife and cut an X into the top and down to 1/4 in from the bottom of the grape.
- Spread the grapes apart very carefully.
- Place the cream mixture into a sealable plastic bag and cut out a small portion of one corner of the bag.
- Pipe the cream mixture into the prepared grapes.
- Place the stuffed grapes into the refrigerator and allow them to chill before serving.
Serving Size: 36

Mozzarella Salami Sticks
What You Need:
- 1/3 C olive oil
- 1/4 C red wine vinegar
- 1 t lemon peel, grated
- 1 garlic clove, sliced
- 1 t Italian seasoning
- 1/2 t red pepper flakes, crushed
- 1/2 lb. mozzarella cheese, cubed
- 1 (4.5 oz) jar whole mushrooms, drained
- 16 slices of hard salami cut in half
- 1/2 C ripe olives, drained
- 16 (4 in) bamboo sticks
How to Make It:
- Pour the olive oil into a sealable bowl.
- Add the vinegar and whisk together well.
- Place the lemon peel and garlic into the mixture.
- Sprinkle in the Italian seasoning and the red pepper flakes and whisks again to combine.
- Add the cheese cubes and mushrooms.
- Cover the bowl and turn over a couple of time to insure the cheese and mushrooms are well covered with the oil mixture.
- Refrigerate at least 1 hour but no longer than 24 hours being sure to turn every so often.
- To assemble the sticks slide an olive on to the stick.
- Fold a slice of salami and slide on the stick.
- Add a cube of cheese and another slice of salami.
- Top with a mushroom.
- Continue with each bamboo stick until all the ingredients are used.
Serving Size: 16
Each bamboo stick should have 5 pieces. Add marinated artichoke hearts to the mix if you would like to give these sticks a little extra. If you’re not a fan of salami try ham instead.
Crunchy Beer Pecans
What You Need:
- 2 C pecan halves
- 2 t chili powder
- 1/2 t cumin
- 2 t salt
- 2 t olive oil
- 1/2 C beer
- 1/2 C sugar
How to Make It:
- Line a baking sheet with aluminum foil.
- Set the oven temperature to 350 degrees and allow to heat while preparing the pecans.
- Place the pecans in a large mixing bowl.
- Sprinkle in the chili powder, cumin and salt.
- Pour the olive oil into the bowl and toss to coat the pecans well.
- Place the pecans in a single layer on the prepared baking sheet.
- Toast 10 minutes or until fragrant.
- Remove and cool on a wire rack.
- Place the cooled pecans into a bowl and any spices that may be loose on the pan.
- Pour the beer into a small saucepan and place over low heat.
- Stir in the sugar and allow the mixture to heat to 250 degrees on a candy thermometer.
- Remove the pan from the heat once it reaches the desired temperature and carefully stir in the pecans.
- Reline the baking sheet with another piece of aluminum foil.
- Spread the pecans on the prepared sheet breaking up any large clumps.
- Allow the pecans to cool to room temperature before serving.
Serving Size: 3 Cups
These pecans are a great munchies at any party. Almonds can also be used along with regular peanuts. If you like them really spicy add a 1/4 t of red pepper to the pecans with the other spices.
