Chive and Onion Roast Beef Bites New Years Eve Recipe
What You Need:
- 1 (1 lb) loaf French bread cut into 30 thin slices
- 2 T olive oil
- 1/2 C chive and onion cream cheese
- 1/2 lb. deli roast beef, sliced thin
- 1/4 t pepper
- 4 plum tomatoes, sliced thin
- 1/2 C green onions, sliced thin
How to Make It:
- Bring the oven temperature to 375 degrees.
- Brush both sides of the bread slices with the olive oil.
- Place on an ungreased cookie sheet and bake 5 minutes or until crispy.
- Allow the bread slices to cool to room temperature.
- Once the bread has cooled spread each piece with the cream cheese.
- Place 1 to slices of roast beef onto the prepared bread.
- Top with a slice of tomato and a few chopped green onions.
Serving Size: 30
Deli turkey or ham taste great on these little sandwiches too. Toast the bread a day ahead. Then assemble the sandwiches an hour before needed. Wrap and place in the refrigerator until ready to serve.

Steak and Potato Poppers
What You Need:
- 2 T olive oil
- 1 1/2 C onion, chopped
- 2 C mushroom stems and pieces, chopped
- 1/2 t thyme
- 1/2 t salt
- 1/4 t pepper
- 1 1/2 C cooked steak, chopped
- 1 1/2 C cooked potatoes, chopped
- 2 t Worcestershire sauce
- 1 C dark beer
- 2 pkgs. prepared pie crust
- 1 egg
- 1 t water
How to Make It:
- Pour the olive oil into a large skillet and place over medium heat.
- Allow the oil to heat until hot but not smoking then add the onions.
- Cook the onions until they just begin to soften.
- Add the mushrooms and cook an additional 5 minutes.
- Add the thyme, salt and pepper and stir slightly.
- Stir in the steak and potatoes.
- Add the Worcestershire sauce and beer.
- Increase the temperature to high and cook the mixture for 5 minutes or until all the liquid and been absorbed stirring often.
- Remove the pan from the stove and allow the mixture to cool about 10 minutes.
- Set the oven temperature to 350 degrees and allow the oven to heat while preparing the poppers.
- Spray a cookie sheet with a non stick cooking spray.
- Generously flour a cutting board and place the pie crust on to the flour board.
- Use a round cookie cutter to press out circles from the pie crust.
- Place the cut crust on the prepared cookie sheet.
- Add more flour if necessary and continue in the same manner with the second pie crust.
- Place 2 T of the mixture into the center of each circle of dough.
- Fold the dough over and press the edges together with a fork dusted with flour.
- Make vent holes in the top of each popper with the fork tines.
- Place the egg and water into a small mixing bowl and blend with a fork.
- Brush the poppers with the egg mixture.
- Bake 25 minutes or until a light golden brown.
Serving Size: 24
Pork Wontons with Ranch Dip
What You Need:
- 1 lb. ground pork
- 1/2 C green onions, minced
- 1 T cornstarch
- 1 (1 oz) pkg. dry Ranch salad dressing mix
- 2 T soy sauce
- 6 dozen wonton wraps
- 2 egg whites
- Canola oil
- 2 C prepared Ranch salad dressing
How to Make It:
- Break the pork up into a large mixing bowl.
- Add the onions and mix with hands to incorporate together.
- Sprinkle in the cornstarch and dry dressing mix.
- Pour in the soy sauce and mix until all the ingredients are combined well.
- Place a t of the mixture into the center of each of the wonton wrappers.
- Beat the egg whites slightly with a fork.
- Using your fingers rub a little egg white around the edges of the wonton wrappers.
- Press the wrappers together to form a triangle.
- Be sure that the wrappers are sealed completely.
- Pour the oil into a deep fryer and allow it to heat to 375 degrees.
- Add 2 or 3 wontons to the hot oil and fry 3 minutes or until a golden brown.
- Remove and drain on paper towel.
- Continue until all the wontons have been fried.
- Serve with the prepared Ranch dressing as a dip.
Serving Size: 6 dozen
Always allow the oil to heat back up to 375 degrees before adding more wontons to the fryer. This will ensure crispy wontons instead of mushy ones.
