Pepperoni Pastry Rounds New Years Day Recipe


What You Need:

 

  • 1 egg
  • 1/2 C pepperoni slices, diced
  • 1/2 C Mozzarella cheese, shredded
  • 1/4 t dried oregano
  • 1 (8 oz) pkg. crescent rolls

How to Make It:


  1. Separate the egg into 2 separate bowls.
  2. Place the pepperoni and cheese into the bowl with the egg yolk.
  3. Sprinkle in the oregano and mix together well.
  4. Whisk the egg white until it becomes frothy then set aside.
  5. Separate the dough into four rectangles and seal any perforations together well.
  6. Spread the pepperoni mixture over each rectangle coming to within 1/4 in of the edge of the dough.
  7. Roll the rectangles up like a jelly roll starting with the short side.
  8. Pinch the seams together to seal the filling in.
  9. Cut each roll into 6 even slices.
  10. Heat the temperature of the oven up to 375 degrees.
  11. Spray a baking sheet with a non stick cooking spray.
  12. Lay the rounds on the baking sheet in a single layer.
  13. Brush the top of each round with a little bit of the egg white.
  14. Bake 13 minutes or until a nice golden brown.

Serving Size:  24


Serve these little rounds with some brown mustard and watch them disappear in no time.  Better make a second batch just in case.

Orange Mustard Smokies


What You Need:

 

  • 1 C brown sugar, packed
  • 1 T all purpose flour
  • 1/4 C orange juice concentrate
  • 2 T mustard
  • 1 T cider vinegar
  • 1 (16 oz) pkg. little smoked sausages

How to Make It:


  1. Place the brown sugar into a large microwave safe bowl.
  2. Add the flour, orange juice concentrate and mustard.
  3. Pour in the vinegar and with a rubber spatula blend the ingredients together well.
  4. Add the sausages and stir again to insure all the sausages are coated with the mixture.
  5. Cover the bowl and place in the microwave.
  6. Microwave on high 3 minutes or until the sauce begins to bubble. 
  7. Stir the mixture after each minute of cooking time.

Serving Size:  4 dozen


These little sausages have both a sweet and sour taste.  The go well at any party and are so easy to make you should consider having more than one batch to go around. 


Louisiana Style Jalapenos


What You Need:

 

  • 16 slices thick bacon strips
  • 16 large jalapeno peppers
  • 2 (3 oz) pkgs. cream cheese, room temperature
  • 1 C cheddar cheese, fine shred
  • 1 t Cajun seasoning

How to Make It:


  1. Cut the bacon slices in half. 
  2. Place the cut bacon in a large skillet over medium heat.
  3. Cook the bacon 3 minutes, turn and continue cooking an addition 2 minutes.
  4. The bacon should be only partially cooked.
  5. Remove to a paper towel and allow the bacon to cool just enough to handle.
  6. Vertically cut the peppers in half.
  7. Remove the seeds and white membrane and discard.
  8. Rinse the peppers under cold water and lay on paper towel to dry,
  9. Place the cream cheese in a mixing bowl and beat with an electric mixer on low speed until smooth.
  10. Add the cheddar cheese and seasoning to the cream cheese.
  11. Use a rubber spatula to combine the ingredients together well.
  12. Stuff each pepper half with 1 t of the cream cheese mixture.
  13. Set the oven temperature to 350 degrees and allow the oven to heat while assembling the peppers.
  14. Wrap a slice of bacon around each pepper half and secure with a toothpick.
  15. Place the wrapped peppers on a wire rack that has been placed in a shallow baking pan.
  16. Bake 25 minutes or until the bacon becomes crisp.

Serving Size:  32


When working with jalapeno peppers always were rubber gloves.  Avoid toughing any part of the body with the gloves.  When finished throw the gloves away and wash your hands with a mild soap and warm water.
