What better way to treat mom on Mother's Day than with a tasty meal or tea? These Mothers Day Recipes will make it easy!


Pizzazz Pepperoni Salad



What You Need:


  • 1 (8 oz.) pkg. lettuce greens
  • 4 C cherry tomatoes
  • 1/2 sweet red onion, sliced
  • 1/2 sweet red pepper, sliced
  • 1 (6 oz.) pkg. sliced pepperoni
  • 1 (4 oz.) pkg. mozzarella cheese, shredded
  • 1/2 C extra virgin olive oil
  • 1/3 C white balsamic vinegar
  • 1 t parsley
  • 1/8 t dried basil
  • 1 t garlic, minced
  • 3/4 t salt
  • 1/2 t pepper
  • 1 (5.5 oz.) box Italian seasoned croutons

How to Make It:


  1. Place the lettuce into a large salad bowl.
  2. Add the tomatoes, onions and red pepper and toss to combine.
  3. Add in the pepperoni slices and toss again.
  4. Sprinkle the mozzarella cheese over the top.
  5. Cover the salad and chill at least 4 hours.
  6. In a jar with a tight fitting lid place the olive oil and vinegar.
  7. Add in the parsley, basil, garlic, salt and pepper.
  8. Tighten the lid and shake until all the ingredients are combined together well.
  9. Pour the dressing over the salad and toss to coat the salad well.
  10. Sprinkle the top with the croutons just before serving.

Makes 6 servings


If Mom is a pepperoni pizza lover but hasn't indulged in one of her favorites for awhile fix her this salad.  Sliced mushrooms or sliced green olives can also be added. 




Chicken and More Spinach Salad


What You Need:


  • 1 lb. boneless skinless chicken breast halves
  • 3/4 t ground cumin, divided
  • 1/2 t salt, divided
  • 1/4 t pepper, divided
  • 1 t + 1 T of olive oil, divided
  • 2 T of lemon juice
  • 2 T of honey
  • 2 t lemon peel, grated
  • 2 pints strawberries, halved
  • 1 (5 oz.) pkg. baby spinach leaves
  • 1/3 C red onion, sliced thin

How to Make It:


  1. Sprinkle the chicken breasts with 1/4 t of the cumin, 1/4 t of the salt and 1/8 t of the pepper being sure to completely cover the chicken.
  2. Place 1 T of the olive oil into a skillet and set the skillet over medium heat.
  3. When the oil is hot but not smoking add the chicken.
  4. Brown the chicken for 5 minutes, turn and continue cooking 4 more minutes or until the chicken is no longer pink in the middle.
  5. Remove the chicken to a platter and cover loosely with aluminum foil.
  6. Place the lemon juice into a small mixing bowl.
  7. Add the honey and lemon peel and whisk until well combined.
  8. Place the remaining cumin, salt and pepper into the mixture and whisk again until completely incorporated into the dressing.
  9. Gradually whisk in the remaining 1 T of the olive oil.
  10. Place the strawberries, spinach and onion into a large salad bowl and toss.
  11. Pour the dressing over the mixture and toss to coat well.
  12. Slice the chicken and arrange the slices over the salad before serving.

Makes 4 servings


This salad takes a little time to prepare but will be worth it when you see the look on Mom's eyes when she tastes it.  For a little crunch add toasted pecan pieces to the salad before adding the chicken slices. 




Stuffed Portobello Mushrooms Topped with Cheese


What You Need:


  • 2 (5 oz) Portobello mushrooms
  • 2 T of olive oil
  • 1 garlic clove, minced
  • 1 (6 oz.) can crabmeat, drained and flaked
  • 5 t mayonnaise
  • 1 sweet red pepper, halved and roasted
  • 2 provolone cheese slices

How to Make It:


  1. Remove the stems from the mushrooms and discard.
  2. Heat the broiler while preparing the stuffed mushrooms.
  3. Spray a baking sheet with a non stick cooking spray.
  4. Pour the oil into a small mixing bowl.
  5. Whisk the garlic into the oil.
  6. Brush the mushroom caps well with the oil mixture.
  7. Place the prepared mushrooms on to the baking sheet.
  8. Broil 6 inches from the heat for 5 minutes or until tender.
  9. Remove the mushrooms from the broiler.
  10. Place the crabmeat into a bowl.
  11. Fold the mayonnaise into the crabmeat until well combined.
  12. Place a red pepper half into each mushroom half.
  13. Divide the crab mixture between the two mushrooms.
  14. Lay a slice of cheese on top of each mushroom half.
  15. Return to the broiler for 1 minutes or until the cheese has begun to melt.

Makes 2 servings


Preparation time: approximately 20 minutes

Broiling time:  approximately 6 minutes

Total time:  approximately 26 minutes


Dads if you want to pamper Mom on her day try this wonderful dish.  If crab is not on the top of her list of favorite foods fill the mushroom with shredded pork or beef instead.  To roast your pepper halves place them on a cookie sheet that has been greased with a little olive oil. Place them in a 400 degree oven for 15 minutes or until tender.
