Tomato Chutney Recipe


Ingredients:


  • 1 Dozen Cooking apples
  • ½ Pound dried apricots
  • 1 Cup raisins
  • 2 Gloves garlic
  • 11/2 Cup sugar
  • 4 Tablespoons salt
  • 2 Tablespoons coriander
  • ½ Tablespoon ginger
  • ½ Cayenne pepper
  • 2 Cups vinegar

Method:


  1. Finely chop the onion, raisins and garlic in a food processor such as a Cuisinart DLC5BC Food Processor
  2. Soak the apricots overnight and boil until soft, using only enough water to cover them and to prevent the apricots from becoming watery
  3. Peel the apples, chop and add to the apricots
  4. Add the vinegar, sugar, salt and spices and mix well
  5. Boil until the apples a soft and mixture has reduced to a thick sauce
  6. Bottle in the same manner as any other preserves and jam


Tasty Banana Chutney Recipe


Ingredients:


  • 30 Bananas
  • 11/2 Bottle vinegar
  • ½ Pound pitted raisins
  • 1 Small chopped onion
  • 1 Pound brown sugar
  • 2 Tablespoons ginger
  • 2 Chopped chilies
  • 1 Tablespoons salt

Method:


  1. Peel and cut the bananas in slices
  2. Mix all the ingredients and cook for 11/2 to 2 hours in the vinegar
  3. Bottle as above
